Turkey Stuffed Bell Pepper

A healthy and flavorful Turkey Stuffed Bell Pepper recipe featuring lean ground turkey, fresh vegetables, and melted cheese baked to perfection for a wholesome meal.

  • 4 large bell peppers, tops cut off and seeds removed
  • 1 lb lean ground turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked brown rice
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onions and garlic; sauté until softened.
  3. Add ground turkey to the skillet, cooking until browned and fully cooked. Season with oregano, cumin, salt, and pepper.
  4. Stir in diced tomatoes and cooked brown rice; cook for another 2-3 minutes to combine flavors.
  5. Place the hollowed bell peppers upright in a baking dish.
  6. Fill each bell pepper with the turkey mixture, packing gently.
  7. Top each stuffed pepper with shredded mozzarella cheese.
  8. Cover the dish with foil and bake for 25 minutes.
  9. Remove the foil and bake an additional 5-10 minutes until cheese is melted and slightly golden.
  10. Garnish with fresh parsley before serving.

Notes

For extra flavor, serve with a side of marinara sauce or add chopped mushrooms to the filling mixture.
