This Traditional Jamaican Potato Salad with Scallions offers a creamy, flavorful twist on classic potato salad, infused with the fresh taste of scallions and a hint of Caribbean seasoning.

  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 scallions, finely chopped
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp allspice
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 hard-boiled eggs, chopped (optional)
  • 1/4 cup celery, finely diced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh lime juice

Instructions

  1. Place the peeled and cubed potatoes in a large pot and cover them with cold water. Add a pinch of salt.
  2. Bring to a boil over medium-high heat and cook until potatoes are tender but firm, about 10-12 minutes. Drain and let cool.
  3. In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, allspice, black pepper, salt, and lime juice. Mix well.
  4. Add the cooled potatoes, scallions, celery, chopped hard-boiled eggs (if using), and fresh parsley to the dressing. Gently fold until all ingredients are evenly coated.
  5. Adjust seasoning to taste and refrigerate for at least 1 hour before serving to allow flavors to meld.
  6. Serve chilled or at room temperature as a delicious side dish.

Notes

For an extra kick, add a small minced Scotch bonnet pepper or substitute scallions with chives for a milder flavor.
