Strawberry Earthquake Cake

Strawberry Earthquake Cake is a luscious, fruity dessert featuring layers of moist chocolate cake, fresh strawberries, and a creamy cheesecake center that creates a delightful burst of flavors in every bite.

  • 1 box chocolate cake mix (plus ingredients called for on box)
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 large egg
  • 2 cups fresh strawberries, sliced
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup water
  • 1 tbsp cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Prepare cake mix batter according to package instructions.
  2. In a medium bowl, beat cream cheese, powdered sugar, and egg until smooth to make the cheesecake layer.
  3. Pour half of the chocolate cake batter into a greased 9×13-inch baking pan.
  4. Drop spoonfuls of the cream cheese mixture evenly over the batter.
  5. Pour the remaining cake batter over the cream cheese layer carefully.
  6. In a small saucepan, combine sliced strawberries, granulated sugar, water, and cornstarch. Cook over medium heat until thickened, about 5 minutes. Remove from heat and add vanilla extract.
  7. Gently spoon the strawberry topping over the cake batter and swirl slightly with a knife.
  8. Bake for 40-45 minutes or until a toothpick inserted comes out with a few moist crumbs.
  9. Let cake cool before slicing. Serve warm or chilled.
