Spicy Minced Beef and Sweet Potato Puchero Soup

  • 1 lb minced beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 medium tomatoes, chopped
  • 1 cup green beans, trimmed and cut
  • 4 cups beef broth
  • 1 cup water
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder (adjust to taste)
  • 1/2 tsp black pepper
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add minced beef, cook until browned and no longer pink.
  3. Stir in cumin, smoked paprika, chili powder, black pepper, and salt. Cook for another 2 minutes to release the spices’ aroma.
  4. Add diced sweet potatoes, red bell pepper, tomatoes, and green beans to the pot. Stir to combine.
  5. Pour in beef broth and water; bring the mixture to a boil.
  6. Reduce heat to low, cover, and simmer for 25–30 minutes until sweet potatoes are tender.
  7. Taste and adjust seasoning if needed.
  8. Serve hot, garnished with fresh cilantro and lime wedges on the side for squeezing.

Notes

For extra heat, add chopped fresh jalapeño or a dash of hot sauce. Serve with crusty bread or steamed rice for a complete meal.
