This Southern Chicken Salad with Grapes and Pecans combines tender chicken, sweet grapes, and crunchy pecans for a refreshing, flavorful meal perfect for lunch or light dinner.

Ingredients

Scale
  • 2 cups cooked chicken breast, shredded
  • 1 cup red seedless grapes, halved
  • 1/2 cup pecans, chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • 2 cups mixed salad greens (optional, for serving)

Instructions

  1. In a large bowl, combine the shredded chicken, halved grapes, chopped pecans, celery, and red onion.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until smooth.
  3. Pour the dressing over the chicken mixture and gently toss to coat everything evenly.
  4. Season with salt and black pepper to taste.
  5. Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld.
  6. Serve on a bed of mixed salad greens or as a sandwich filling.

Notes

For added texture, try toasting the pecans lightly before adding them. You can also substitute Greek yogurt for mayonnaise for a lighter version.
