Smoked Salmon and Cucumber Ribbon Salad with Cream Cheese

This light and refreshing smoked salmon and cucumber ribbon salad features creamy cheese accents, combining fresh flavors perfect for a healthy lunch or elegant appetizer.

Ingredients

  • 200g smoked salmon, thinly sliced
  • 2 large cucumbers
  • 100g cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 tsp capers (optional)

Instructions

  1. Use a vegetable peeler or mandoline to slice the cucumbers into thin ribbons.
  2. In a small bowl, mix the cream cheese with lemon juice, chopped dill, salt, and pepper until smooth.
  3. On a serving plate, arrange cucumber ribbons in a loose pile or circle.
  4. Dollop or pipe the cream cheese mixture over the cucumber ribbons evenly.
  5. Artfully place slices of smoked salmon atop the salad.
  6. Drizzle with olive oil and sprinkle with capers if using.
  7. Garnish with extra dill and a grind of black pepper before serving.
