Slow Cooker Hearty Beef Stew

This Slow Cooker Hearty Beef Stew is a comforting blend of tender beef, fresh vegetables, and rich broth, perfect for warming up any chilly day.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 large carrots, sliced
  • 3 medium potatoes, peeled and diced
  • 2 celery stalks, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • 3 tbsp all-purpose flour
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Toss beef cubes in flour seasoned with salt and pepper, then brown beef in batches until golden on all sides.
  2. Transfer browned beef to the slow cooker. Add carrots, potatoes, celery, onion, and garlic on top.
  3. Stir together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Pour mixture over the beef and vegetables in the slow cooker.
  4. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until beef is tender and vegetables are cooked through.
  5. About 30 minutes before serving, stir in frozen peas and adjust seasoning with salt and pepper as needed.
  6. Remove bay leaves before serving. Serve hot with crusty bread or over mashed potatoes if desired.

Notes

For an extra depth of flavor, add a splash of red wine to the broth mixture before slow cooking. This stew also pairs wonderfully with a fresh green salad.
