Pineapple Chicken and Rice

A flavorful and easy-to-make Pineapple Chicken and Rice dish combining tender chicken, sweet pineapple, and savory seasonings for a perfect weeknight dinner.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup jasmine rice
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup diced bell peppers (red or green)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 2 green onions, sliced (optional garnish)
  • Salt to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add diced onion, bell peppers, and garlic; sauté until softened, about 3-4 minutes.
  4. Add rice to the skillet and stir to combine with vegetables.
  5. Pour in chicken broth, soy sauce, honey, ground ginger, black pepper, and salt. Stir well.
  6. Bring mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  7. After 15 minutes, stir in pineapple chunks and cooked chicken. Cover and cook an additional 5 minutes until rice is tender and liquid absorbed.
  8. Fluff rice with a fork and garnish with sliced green onions before serving.

Notes

For extra flavor, try adding a splash of lime juice or a sprinkle of chopped cilantro just before serving.
