Delight in rich and buttery pecan pie bars featuring a crisp shortbread crust topped with a gooey, nutty pecan filling—perfect for dessert or a sweet snack.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups light corn syrup
  • 1 tablespoon vanilla extract
  • 2 1/2 cups pecan halves

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, combine melted butter, brown sugar, flour, granulated sugar, and salt until a crumbly dough forms.
  3. Press the dough evenly into the bottom of the prepared pan to form the crust.
  4. Bake crust for 15 minutes until lightly golden.
  5. Meanwhile, whisk together eggs, corn syrup, and vanilla extract in a separate bowl.
  6. Stir in pecan halves until fully coated.
  7. Pour pecan mixture evenly over the pre-baked crust.
  8. Bake for an additional 35-40 minutes, until filling is set and golden brown.
  9. Allow bars to cool completely in the pan before lifting out and cutting into squares.

Notes

For an extra decadence, serve these bars slightly warm with a scoop of vanilla ice cream or a dollop of whipped cream.
