  • 1 cup orzo pasta
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 cup toasted pine nuts

Instructions

  1. Cook the orzo pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Add the cooled orzo, chopped sun-dried tomatoes, red onion, parsley, and basil to the bowl. Toss to combine.
  4. Gently fold in the crumbled feta cheese and toasted pine nuts if using.
  5. Adjust seasoning with additional salt and pepper if needed.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

For extra protein, add grilled chicken or chickpeas. This salad can be made a day ahead and stored in the fridge for up to 2 days.
