Mediterranean Quinoa Stuffed Cucumber

A refreshing and nutritious Mediterranean-inspired dish featuring quinoa, fresh vegetables, and herbs stuffed inside crisp cucumber boats for a light and healthy meal or snack.

Ingredients

  • 1 cup cooked quinoa
  • 2 large cucumbers
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Cook quinoa according to package instructions and let it cool.
  2. Wash cucumbers and slice them in half lengthwise. Using a spoon, scoop out the seeds to create hollow cucumber boats.
  3. In a mixing bowl, combine cooked quinoa, diced cherry tomatoes, chopped olives, crumbled feta, red onion, parsley, and mint.
  4. Drizzle olive oil and lemon juice over the quinoa mixture, then season with salt and black pepper. Mix well.
  5. Fill each hollowed cucumber half with the quinoa mixture, pressing down gently to pack it in.
  6. Serve immediately or chill for 20 minutes for a cooler, refreshing taste.

Notes

For an extra protein boost, add some diced grilled chicken or chickpeas to the quinoa mixture.
