Lemon Pepper Chicken Thighs

Tender and juicy chicken thighs seasoned with zesty lemon and cracked black pepper, perfect for a quick and flavorful dinner.

  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons lemon pepper seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 lemon, juiced and zested
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat chicken thighs dry with paper towels.
  3. In a small bowl, combine lemon pepper seasoning, garlic powder, and salt.
  4. Rub the olive oil over the chicken thighs, then evenly coat them with the seasoning mixture.
  5. Place chicken thighs on a baking sheet skin-side up.
  6. Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  7. Remove from oven, squeeze lemon juice over the chicken, and sprinkle with lemon zest.
  8. Garnish with chopped fresh parsley if desired, and serve hot.

Notes

For extra crispiness, broil the chicken thighs for 2-3 minutes at the end of cooking, watching closely to prevent burning.
