Ingredients

Scale
  • 2 T-bone steaks (about 12 oz each)
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 large onions, sliced into rings
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the sliced onions with 1 tbsp olive oil, salt, and pepper, then spread them on a baking sheet and roast for 25-30 minutes until caramelized.
  3. Season both sides of the T-bone steaks generously with salt, pepper, thyme, and rosemary.
  4. Heat 1 tbsp olive oil in a heavy skillet over high heat until shimmering.
  5. Sear the steaks for 3-4 minutes on each side for medium-rare, or adjust time to your preferred doneness.
  6. Reduce the heat to medium, add butter and minced garlic to the skillet, and baste the steaks with the garlic butter for 1-2 minutes.
  7. Remove the steaks from the skillet and let them rest for 5 minutes.
  8. Serve the steaks topped with the roasted onions and drizzle with the remaining garlic butter from the pan.

Notes
