Italian Minestrone Soup Bowl

A hearty and colorful Italian minestrone soup packed with fresh vegetables, beans, and pasta, perfect for a nourishing meal any day of the week.

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1/2 cup small pasta (e.g., ditalini or elbow macaroni)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and freshly ground black pepper to taste
  • 2 cups fresh spinach
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened, about 3-4 minutes.
  2. Add carrots, celery, zucchini, and green beans. Cook for 5 minutes, stirring occasionally.
  3. Stir in diced tomatoes, vegetable broth, oregano, and basil. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add cannellini beans and pasta. Cook until pasta is tender, about 8-10 minutes.
  5. Stir in fresh spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
  6. Ladle soup into bowls and sprinkle with grated Parmesan cheese, if desired. Serve hot.

Notes

For extra richness, add a splash of good-quality olive oil or a dollop of pesto just before serving.
