Ground Beef and Vegetable Casserole with Cheddar

A hearty and flavorful casserole combining savory ground beef, fresh vegetables, and melted cheddar cheese for a comforting family dinner.

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, chopped
  • 1 cup green beans, chopped
  • 1 cup corn kernels
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded sharp cheddar cheese
  • 1 cup mashed potatoes (prepared)
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic; sauté until fragrant and translucent.
  3. Add ground beef to the skillet and cook until browned, breaking it up as it cooks. Drain excess fat.
  4. Stir in carrots, green beans, corn, diced tomatoes, dried thyme, salt, and pepper. Cook for 5 minutes until vegetables start to soften.
  5. Transfer the beef and vegetable mixture to a casserole dish and spread evenly.
  6. Top with mashed potatoes and then sprinkle shredded cheddar cheese over the top.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, sprinkle some chopped fresh parsley or green onions on top before serving.
