Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and 1 cup sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix until combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and 1 tablespoon cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, combine 1/4 cup sugar and 2 teaspoons cinnamon for the coating.
  7. Roll dough into 1.5-inch balls, then roll each ball in the cinnamon-sugar mixture to coat.
  8. Place coated dough balls on the prepared baking sheet about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are set but centers remain soft.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
