  • 1 cup granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 vanilla bean, split and seeds scraped
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in the vanilla bean seeds and vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gradually add dry ingredients to the butter mixture alternately with milk, beginning and ending with the flour mixture. Mix just until combined.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
