Chicken Fajita Bowl with zesty Cilantro Lime Rice

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup long grain white rice
  • 2 cups water or chicken broth
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1/2 cup black beans, rinsed and drained (optional)
  • 1/2 cup corn kernels (optional)
  • Sour cream, avocado slices, and salsa for serving (optional)

Instructions

  1. In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Rub this spice mix evenly over both sides of the chicken breasts.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until cooked through and nicely charred. Remove from skillet and let rest.
  3. In the same skillet, add sliced bell peppers and onions. Sauté for 5-6 minutes until tender-crisp. Season with a pinch of salt and pepper.
  4. Meanwhile, rinse the rice under cold water. In a medium saucepan, bring water or chicken broth to a boil. Add rice, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid absorbed.
  5. Once the rice is cooked, fluff with a fork and stir in chopped cilantro and lime juice. Add black beans and corn if using, mixing gently to combine.
  6. Slice the rested chicken breasts into strips.
  7. To assemble bowls, start with a base of cilantro lime rice, top with sautéed peppers and onions, then add chicken slices. Garnish with sour cream, avocado, and salsa if desired.

Notes

For extra heat, add sliced jalapeños to the sautéed vegetables or sprinkle cayenne pepper over the chicken. Serve with warm tortillas to make fajita wraps.
