Caramel Apple Cheesecake Bar

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup caramel sauce, plus extra for drizzling

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press evenly into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  4. Fold in diced apples, ground cinnamon, and nutmeg until evenly distributed.
  5. Pour the cheesecake mixture over the crust. Drizzle 1/2 cup caramel sauce over the top and swirl gently with a knife.
  6. Bake for 40-45 minutes or until the center is set and edges are lightly browned.
  7. Remove from oven and let cool completely, then refrigerate for at least 3 hours to set.
  8. Before serving, drizzle additional caramel sauce over the bars as desired. Cut into squares and enjoy.

Notes

For extra texture, sprinkle chopped walnuts or pecans on top before baking. Serve chilled with a scoop of vanilla ice cream.
