Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Flatten chicken breasts to an even thickness using a meat mallet.
  3. Season the chicken breasts with salt and pepper.
  4. Prepare three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and Parmesan cheese.
  5. Dredge each chicken breast in flour, shaking off excess, then dip into eggs, and finally coat evenly with breadcrumb mixture.
  6. Heat olive oil in a skillet over medium-high heat.
  7. Cook breaded chicken breasts for 3-4 minutes per side until golden brown.
  8. Transfer chicken to a baking dish; spoon marinara sauce over each filet and sprinkle with mozzarella cheese.
  9. Bake in the preheated oven for 12-15 minutes or until chicken is cooked through and cheese is melted and bubbly.
  10. Garnish with fresh basil leaves if desired before serving.

Notes

For extra flavor, add a sprinkle of crushed red pepper flakes to the marinara sauce or serve with a side of garlic bread and a fresh green salad.
