Blueberry Banana Protein Pancakes

Fluffy and nutritious blueberry banana protein pancakes that are perfect for a healthy breakfast or post-workout meal. Packed with natural sweetness and protein to keep you energized all morning.

Ingredients

  • 1 ripe banana
  • 1/2 cup fresh blueberries
  • 2 large eggs
  • 1 scoop vanilla protein powder
  • 1/2 cup rolled oats
  • 1/4 cup unsweetened almond milk
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Coconut oil or cooking spray for the pan

Instructions

  1. In a blender, combine the banana, eggs, protein powder, rolled oats, almond milk, baking powder, cinnamon, vanilla extract, and salt. Blend until smooth.
  2. Gently fold in the fresh blueberries.
  3. Heat a non-stick skillet over medium heat and lightly grease with coconut oil or cooking spray.
  4. Pour 1/4 cup of batter onto the skillet for each pancake.
  5. Cook for 2-3 minutes until bubbles form on the surface, then carefully flip and cook for another 2 minutes until golden brown and cooked through.
  6. Repeat with remaining batter, greasing the pan as needed.
  7. Serve warm with your favorite toppings such as maple syrup, extra blueberries, or nut butter.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking. You can also substitute almond milk with any milk of your choice.
