Beef Black Bean Chili Mac

Hearty and comforting, this Beef Black Bean Chili Mac combines tender ground beef, savory black beans, and cheesy macaroni for a flavorful twist on classic chili.

  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups elbow macaroni
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add ground beef to the skillet, breaking it up with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.
  5. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook spices for 1 minute to release aromas.
  6. Pour in diced tomatoes with green chilies, black beans, and beef broth. Stir well and bring to a simmer.
  7. Reduce heat to low and let simmer for 10 minutes, allowing flavors to meld.
  8. Add cooked macaroni and shredded cheddar cheese to the skillet. Stir gently until cheese melts and everything is well combined.
  9. Remove from heat, garnish with fresh cilantro if desired, and serve hot.

Notes

For a spicier kick, add diced jalapeños or a dash of hot sauce before serving.
