Baked Low Sodium Balsamic Chicken Thighs with Rosemary

These baked low sodium balsamic chicken thighs are tender, flavorful, and infused with fresh rosemary, offering a healthy and delicious meal perfect for any dinner.

  • 6 boneless, skinless chicken thighs
  • 3 tbsp low sodium balsamic vinegar
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 lemon, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, rosemary, thyme, and black pepper.
  3. Place the chicken thighs in a baking dish and pour the marinade over them, ensuring they’re evenly coated.
  4. Arrange lemon slices on top of the chicken.
  5. Marinate for at least 15 minutes, or up to 1 hour in the refrigerator for deeper flavor.
  6. Bake uncovered for 25–30 minutes, or until chicken is cooked through and juices run clear.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For added flavor, garnish with extra fresh rosemary and serve alongside roasted vegetables or a crisp green salad.
