Baked Green Bean Fries with Garlic Aioli

Crispy baked green bean fries served with a creamy garlic aioli, a healthy and delicious alternative to traditional fries that’s perfect as a snack or side dish.

  • 1 pound fresh green beans, trimmed
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray
  • For the garlic aioli:
  • 1/2 cup mayonnaise
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with olive oil.
  2. In a shallow bowl, place the flour. In another bowl, beat the eggs. In a third bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  3. Dip each green bean first in flour, shaking off excess, then in beaten eggs, and finally coat with the breadcrumb mixture. Place coated green beans on the prepared baking sheet.
  4. Lightly spray the green bean fries with olive oil spray.
  5. Bake for 15-20 minutes, turning once halfway through, until golden brown and crispy.
  6. While the fries bake, whisk together mayonnaise, minced garlic, lemon juice, and salt and pepper in a small bowl to make the garlic aioli.
  7. Serve the baked green bean fries warm with garlic aioli on the side for dipping.

Notes

For an extra kick, add a pinch of cayenne pepper to the breadcrumb mixture or mix some smoked paprika into the aioli.
