Authentic Chicken Masala Curry

Experience the rich flavors of traditional Indian cuisine with this Authentic Chicken Masala Curry, featuring tender chicken simmered in a fragrant, spiced tomato sauce.

  • 1 lb (450g) chicken thighs, boneless and skinless, cut into pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 medium tomatoes, pureed
  • 1/2 cup plain yogurt
  • 2 tsp garam masala
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder (adjust to taste)
  • 1/2 tsp paprika
  • 1/2 cup water
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 tsp kasuri methi (dried fenugreek leaves), crushed (optional)

Instructions

  1. Heat oil in a large skillet over medium heat. Add the chopped onions and sauté until golden brown, about 8 minutes.
  2. Add minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
  3. Stir in garam masala, ground coriander, cumin, turmeric, chili powder, and paprika. Cook the spices for about 1 minute to release their aromas.
  4. Add the pureed tomatoes and cook until the oil starts to separate from the masala, about 5-7 minutes.
  5. Lower the heat and add the yogurt gradually, stirring continuously to prevent curdling.
  6. Add the chicken pieces, salt, and water. Mix well to coat the chicken with the masala.
  7. Cover and simmer on low heat for 20-25 minutes, stirring occasionally, until the chicken is cooked through and tender.
  8. Optional: Sprinkle crushed kasuri methi over the curry and stir to combine.
  9. Garnish with chopped fresh cilantro before serving.
  10. Serve hot with steamed basmati rice or warm naan bread.

Notes

For extra richness, add a splash of heavy cream or coconut milk towards the end of cooking. Adjust the chili powder to your preferred spice level.
