1 cup orzo pasta
1 bunch asparagus, trimmed and cut into 1-inch pieces
1/2 cup crumbled feta cheese
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
Salt and freshly ground black pepper, to taste
Instructions
Cook the orzo according to package instructions until al dente. Drain and rinse under cold water to cool.
Blanch the asparagus pieces in boiling water for 2-3 minutes until bright green and crisp-tender. Drain and immediately transfer to an ice bath to stop cooking. Drain again.
In a large bowl, combine the cooked orzo, asparagus, red onion, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper.
Pour the dressing over the orzo mixture and toss to coat evenly.
Gently fold in the crumbled feta cheese.
Adjust seasoning if needed and serve chilled or at room temperature.
Notes
For added crunch, sprinkle toasted pine nuts or walnuts on top before serving.
