Apple Pie Bread Pudding with rich vanilla custard

This comforting Apple Pie Bread Pudding combines tender baked bread cubes with cinnamon-spiced apples, soaked in a rich vanilla custard for a decadent dessert perfect for any occasion.

  • 6 cups cubed day-old brioche or challah bread
  • 3 medium apples, peeled, cored and sliced
  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 2 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a skillet, melt butter over medium heat. Add apples, brown sugar, cinnamon, and nutmeg; sauté until apples are tender, about 5 minutes. Remove from heat.
  3. In a large bowl, whisk together eggs, milk, heavy cream, granulated sugar, vanilla extract, and salt until well combined.
  4. Place bread cubes in the prepared baking dish. Evenly distribute the sautéed apples over the bread.
  5. Pour the custard mixture over the bread and apples, pressing down gently to soak bread well. Let it sit for 15 minutes to absorb.
  6. Bake uncovered for 45-50 minutes or until custard is set and top is golden brown.
  7. Remove from oven and allow to cool slightly before serving. Serve warm with extra vanilla custard or whipped cream if desired.

Notes

For an extra indulgent touch, drizzle caramel sauce over the bread pudding just before serving, or add chopped toasted pecans for crunch.
