  • 2 tablespoons olive oil
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a shallow bowl, combine ground almonds, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each fish fillet first into the egg mixture, then coat evenly with the almond mixture.
  5. Place the coated fillets on the prepared baking sheet and drizzle or brush with olive oil.
  6. Bake for 12-15 minutes, or until the fish is cooked through and the crust is golden brown.
  7. Serve hot with lemon wedges and your choice of sides.

Notes

For extra crispiness, broil the fish fillets for the last 1-2 minutes but watch carefully to avoid burning.
