Air Fryer Garlic Herb Potato Wedge

Crispy on the outside and tender on the inside, these Air Fryer Garlic Herb Potato Wedges are a flavorful, healthy side perfect for any meal or snack.

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash and scrub the potatoes thoroughly; leave the skin on for extra texture.
  2. Cut each potato into 8 wedges by slicing in half lengthwise, then cutting each half into quarters.
  3. In a large bowl, combine olive oil, minced garlic, rosemary, thyme, oregano, smoked paprika, salt, and pepper.
  4. Toss the potato wedges in the seasoned olive oil mixture until evenly coated.
  5. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  6. Place the potato wedges in a single layer in the air fryer basket. Depending on the size of your air fryer, cook in batches if necessary.
  7. Air fry for 18-22 minutes, shaking the basket halfway through to ensure even cooking, until wedges are golden brown and crispy.
  8. Remove from the air fryer and garnish with fresh chopped parsley before serving.

Notes

For extra crispiness, soak the potato wedges in cold water for 30 minutes before seasoning to remove excess starch, then pat dry thoroughly.
