20-minute Balsamic Orzo Salad with Spinach and Feta

This quick and flavorful balsamic orzo salad combines tender orzo pasta with fresh spinach, tangy feta, and a zesty balsamic vinaigrette for a perfect light meal or side dish.

  • 1 cup orzo pasta
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh basil, chopped
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons extra-virgin olive oil
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the orzo pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and pepper to create the dressing.
  3. Add the cooled orzo, chopped spinach, sun-dried tomatoes, red onion, and fresh basil to the bowl with the dressing.
  4. Toss everything gently until well combined and evenly coated with the dressing.
  5. Sprinkle the crumbled feta cheese on top and gently fold it into the salad.
  6. Adjust seasoning with additional salt and pepper if desired, and serve immediately or chill for 10 minutes for enhanced flavor.

Notes

For extra protein, add grilled chicken or chickpeas before serving. This salad can be made ahead and kept refrigerated for up to 2 days.
